Food52 Review: This is a devilishly hot sauce with great depth and versatility. It’s very easy to make and it makes a lot — you could halve the recipe if you don’t need much. Be sure to remove any seeds from your chipotle peppers first. If you wanted a sweet version, consider just adding smoked paprika and no peppers. I served this ketchup with a grassfed steak, grilled using a dry rub. It would be a welcome variation from plain old ketchup for sweet potato fries and I think it will work very well with chicken — among many other possibilities! – Sagegreen —The Editors

Medium red onion, sliced

Cloves of garlic, chopped

cups Organic ketchup

cups Organic apple sauce

teaspoon Paprika

tablespoon Cumin

1/4
cup Chipotle in Adobo with juice, diced

Salt and pepper to taste

Oil to coat the bottom of a sauce pot
Directions
- Heat up the oil in a sauce pot at medium high. Add the sliced onion, cook for few minutes, and add the garlic. Caramelize the onions, about 10 mins.
- Add ketchup, apple sauce, paprika, cumin, and the diced chipotle with it juice. Season with salt and pepper. Bring down the heat to simmer and cook for about 30 to 40 mins.
