Ingredients
- 180g Hakubaku Organic Soba Noodles
- 2 cups baby kale leaves
- 80ml (1/3 cup) rice wine vinegar
- 60ml (1/4 cup) light soy sauce
- 2 teaspoons caster sugar
- 2 teaspoons fresh ginger, finely grated
- 1 teaspoon sesame oil
- 150g hot smoked salmon, flaked
- Sesame seeds, toasted, to serve
Method
- Step 1Cook the soba noodles in a large saucepan of boiling water for 1 minute. Add the baby kale leaves. Cook for 30 seconds or until wilted. Drain. Transfer to a bowl.
- Step 2Combine the rice wine vinegar, soy sauce, sugar, ginger and sesame oil in a small jug. Add to noodles and toss to coat.
- Step 3Serve the noodles topped with the flaked salmon. Sprinkle with the sesame seeds.
