Ingredients
- 3 garlic cloves, crushed
- 1 brown onion, grated
- 1 tablespoon allspice
- 1 teaspoon fresh thyme leaves
- 8 small chicken drumsticks
- lime wedges, to serve
Method
- Step 1Combine garlic, onion, allspice and thyme in a bowl. Cut 3 deep slits in each drumstick. Place chicken in a glass or ceramic dish. Rub garlic mixture into chicken. Cover and refrigerate for 4 hours or overnight.
- Step 2Preheat oven to 200°C/180°C fan-forced. Line a baking dish with baking paper. Spray a wire rack with oil. Place in prepared dish. Place chicken on wire rack. Cook for 40 to 50 minutes or until golden and cooked through. Serve with lime wedges.
