Here’s a recipe made for making and freezing, then thawing and enjoying on another night – less work and more ‘me’ time!
Ingredients
- 2 tablespoons olive oil
- 2 medium brown onions, finely chopped
- 2 medium carrots, peeled, finely chopped
- 1kg beef mince
- 2 x 500g jars tomato and vegetable pasta sauce
- 3 (500g) desiree potatoes, peeled, chopped
- 100g butter, chopped
- 1/2 cup milk
- 2 tablespoons finely chopped fresh rosemary leaves
- 1 cup finely grated parmesan cheese
Method
- Step 1Heat oil in a large saucepan over medium-high heat. Add onion and carrot. Cook, stirring, for 5 minutes or until onion has softened. Add mince. Cook, stirring with a wooden spoon to break up mince, for 10 minutes or until browned. Add pasta sauce and 1 cup cold water. Bring to the boil. Reduce heat to medium-low. Simmer, stirring occasionally, for 20 minutes or until thickened.
- Step 2Preheat oven to 200°C/180°C fan-forced. Place potato in a large saucepan. Cover with cold water. Bring to the boil. Boil for 15 minutes or until tender. Drain. Return to pan. Mash until just smooth. Add butter, milk and rosemary. Stir to combine. Season with salt and pepper.
- Step 3Spoon meat mixture into eight 1 1/4 cup-capacity ovenproof dishes (see note). Top with mash then parmesan. Place 4 pies on a baking tray (see note for freezing instructions for remaining 4 pies).
- Step 4Bake for 30 minutes or until golden. Serve. Instead of 8 dishes, you could use two 21cm (base) glass or ceramic pie plates and freeze 1 pie plate.

Notes
Makes 4 to serve now and 4 to freeze.
To freeze: Follow recipe to the end of step 3. Allow 4 pies to cool. Cover with plastic wrap, then foil. Freeze for up to 3 months.
To thaw: Thaw pies in fridge overnight.
To reheat: Preheat oven to 200C/180C fan-forced. Follow step 4.
