The success of the perfect prawn stir-fry lies in the marinade – and this one’s a winner.
Ingredients
- 750g medium green prawns, peeled (tails intact), deveined
- 2 tablespoons peanut oil
- 1 red onion, cut into wedges
- 1 carrot, peeled, cut into thick matchsticks
- 1 green capsicum, cut into 3cm pieces
- 200g snow peas, trimmed, halved diagonally
- Cooked hokkien noodles, to serve
Honey ginger marinade
- 1/4 cup honey
- 2cm piece fresh ginger, cut into short matchsticks
- 2 garlic cloves, crushed
- 2 tablespoons lemon juice
Method
- Step 1Combine the marinade ingredients in a jug.
- Step 2Place prawns in a glass or ceramic bowl. Add marinade. Toss to coat. Cover and refrigerate for 15 minutes. Drain prawns, reserving marinade.
- Step 3Heat half the oil in a wok over medium-high heat. Stir-fry prawns, in batches, for 2 minutes or until just pink. Transfer to a bowl.
- Step 4Heat remaining oil in wok. Add onion, carrot and capsicum. Stir-fry for 2 to 3 minutes or until just tender. Add snow peas. Stir-fry for 1 minute. Return prawns to wok. Add reserved marinade. Stir-fry for 2 minutes or until sauce boils and prawns are cooked through. Serve with noodles.
