Sweet and spicy, this stir-fry is the perfect midweek meal. Serve it with a big bowl of rice and let the whole family tuck in.
Ingredients
- 300g sticky pork ribs (see related recipe)
- 1 tablespoon peanut oil
- 115g fresh baby corn, halved lengthways
- 1 large red capsicum, sliced
- 1 medium yellow capsicum, sliced
- 1 bunch broccolini, trimmed, chopped
- 6cm piece fresh ginger, peeled, finely grated
- 2 tablespoons honey
- 1 1/2 tablespoons soy sauce
- Steamed jasmine rice, to serve
Method
- Step 1Remove and discard any bones from pork. Cut pork into 5mm-thick slices.
- Step 2Heat oil in a wok over high heat. Swirl to coat. Add corn, capsicum and broccolini. Stir-fry for 6 minutes or until broccolini is just tender. Add ginger. Stir-fry for 1 minute or until fragrant. Add pork, honey, soy and 1 tablespoon cold water. Stir-fry for 2 minutes or until heated through. Serve with rice.
