Get out the chopsticks and dive into a bowl of slippery noodles, healthy vegetables and black bean sauce.
Ingredients
- 400g pack fresh Hokkien noodles
- 1 tablespoon peanut oil or canola oil
- 1 tablespoon shredded ginger
- 2 tablespoons black bean sauce
- 1 tablespoon honey
- 1 bunch baby bok choy, trimmed and roughly chopped
- 1 bunch broccolini, trimmed and roughly chopped
- 100g snow peas, trimmed
Method
- Step 1Place the noodles in a heatproof bowl and cover with boiling water. Stand for 5 minutes then drain and set aside.
- Step 2Heat the oil in a wok or large frying pan over medium-high heat. Add the ginger and cook for 2 minutes then add the combined black bean sauce and honey. Cook for a minute before adding the bok choy and broccolini. Stir fry for 2-3 minutes, add the snow peas and noodles and toss to coat in the sauce. Cook for another minute then serve immediately.

Notes
Hokkien noodles (bearing the name of a province in China) are a rounded, spaghetti-like yellow egg noodle available from the refrigerator section of the supermarket. They are ideal for stirfries because they soak up sauces and flavours. This is an easy vegetable stir-fry which also works well with the addition of sliced chicken breast, steak or firm tofu for protein.
