Pita bread filled with mince, capsicum and Moroccan spices makes an easy family dinner.

Ingredients

  • 500g beef mince
  • 1 brown onion, finely chopped
  • 1 green capsicum, seeded, finely chopped
  • 1 large ripe tomato, finely chopped
  • 2 garlic cloves, crushed
  • 1/4 cup finely chopped flat-leaf parsley
  • 1/4 cup finely chopped coriander
  • 2 tsp Moroccan spice mix
  • 1/4 tsp cayenne pepper
  • 6 pita pockets, halved crossways
  • 1 tbs olive oil
  • Tamar Valley Greek Style Yoghurt, to serve
  • Lemon wedges, to serve

Method

  • Step 1
    Preheat oven to 240C/220C fan forced. Combine beef, onion, capsicum, tomato, garlic, parsley, coriander, Moroccan spice mix and cayenne pepper in a large bowl. Season well with salt and pepper.
  • Step 2
    Divide beef mixture into twelve even portions. Place beef mixture into each pita pocket half, gently pressing to flatten. Lightly brush the pita breads with olive oil. Wrap each pita bread loosely in baking paper. Place on a baking tray (see note). Bake for 15 minutes. Turn and bake for a further 15 minutes or until golden brown and heated through. Serve with yoghurt and lemon wedges.

Notes
