If want a sumptuous Christmas feast on a budget, look no further than this delicious ham special.
Ingredients
- 3 oranges
- 1/3 cup fig jam
- 1 tablespoon wholegrain mustard
- 2 teaspoons olive oil
- 8 ham steaks
Method
- Step 1Juice 2 oranges. Peel and segment remaining orange (see note). Combine jam, mustard and 1/2 cup orange juice in a jug.
- Step 2Heat oil in a large frying pan over medium heat. Add half the steaks. Cook for 2 minutes each side, basting with 1 tablespoon jam mixture, or until lightly browned. Transfer to a platter. Cover to keep warm. Repeat with 1 tablespoon jam mixture and remaining steaks. Transfer to platter.
- Step 3Add remaining jam mixture and 2 tablespoons cold water to pan. Stir to combine. Add orange segments. Bring to the boil. Reduce heat to low. Simmer for 3 minutes or until slightly thickened.
- Step 4Serve steaks topped with orange segment mixture.

Notes
To segment oranges, remove peel and pith. Using a small knife, cut down either side of membrane to release segments.
