These small quiches are just the right size for a lunch-time meal.
Ingredients
- 3 sheets frozen ready-rolled shortcrust pastry, thawed
- 75g ham, finely chopped
- 75g can corn kernels, drained
- 30g (1/4 cup) grated Swiss cheese
- 2 teaspoons chopped chives
- 3 eggs, lightly beaten
- 80ml (1/3 cup) cream
- salt and cracked black pepper
Method
- Step 1Preheat oven to 170°C. Grease the holes of a 12-hole patty pan. Use a 12cm-diameter round pastry cutter to cut 12 circles from the pastry. Place in the the prepared pan, pressing the pastry into the edges of each hole. Cover and place in the refrigerator to chill for 15 minutes.
- Step 2Combine the ham, corn, cheese, chives, eggs, cream, salt and pepper in a medium bowl. Spoon evenly between the chilled pastry. Cook for 20 minutes or until golden. Serve warm or cooled.

Notes
Patty pans are larger than mini-muffin pans with a round base. Available at kitchenware shops. Variation: As an alternative, substitute the ham for smoked salmon and the Swiss cheese for tasty cheese. Remove the corn.
