This tasty pasta dish will be loved by old and young alike.
Ingredients
- 375g penne rigate
- 450g broccoli, cut into small florets
- 1 tablespoon olive oil
- 2 garlic cloves, crushed
- 250g sliced double-smoked ham, chopped
- 3 green onions, chopped
- 3/4 cup light evaporated milk
- 3/4 cup grated reduced-fat tasty cheese
- 2 egg yolks
Method
- Step 1Cook pasta in a large saucepan of boiling, salted water until tender, adding broccoli for the last 3 minutes of cooking. Drain.
- Step 2Meanwhile, heat oil in a large, deep frying pan over high heat. Add garlic, ham and onion. Cook, stirring, for 2 to 3 minutes or until onion has softened. Add pasta and broccoli. Reduce heat to low.
- Step 3Whisk milk, cheese and egg yolks together in a jug. Add mixture to pasta. Season with salt and pepper. Toss to coat. Cook for 2 to 3 minutes or until heated through. Serve.
