Here’s the latest coop – a fresh-look chicken delight to please the cluckiest guest!
Ingredients
- 4 slices champagne leg ham
- 1 tablespoon wholegrain mustard
- 8 (110g each) chicken thigh fillets
- 2 cups fresh breadcrumbs
- 1/4 cup grated parmesan cheese
- 1/2 cup plain flour
- 1/3 cup milk
- 1 egg
- Alfa One rice bran oil cooking spray
- Steamed green beans, to serve
Method
- Step 1Preheat oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper. Spread each ham slice with 1 teaspoon mustard. Roll up tightly. Cut each roll in half crossways. Place 1 chicken thigh fillet, smooth side down, on a chopping board. Place 1 piece of ham on centre of chicken. Roll up chicken to enclose. Secure with a toothpick. Repeat with remaining ham, chicken and toothpicks.
- Step 2Combine breadcrumbs and parmesan on a plate. Place flour on a plate. Whisk milk and egg together in a shallow bowl.
- Step 3Coat 1 piece of chicken in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumb mixture. Place on prepared tray. Repeat with remaining chicken, flour, egg and breadcrumb mixture.
- Step 4Spray chicken with oil. Bake for 35 to 40 minutes or until golden and cooked through. Remove and discard toothpicks. Serve chicken with beans.
