Makes: 4 half avocados
Ingredients

avocados, pitted and smashed

tablespoons pico de gallo, homemade or store bought

tablespoons lime juice

tablespoons cilantro, minced

tablespoons garlic powder

dash
salt and pepper

4
cilantro leaves for topping
Pico de Gallo

roma tomatoes, diced

tablespoon red onion, minced

tablespoon cilantro, minced

small garlic clove, minced

teaspoon lime juice
Directions
- Prep ingredients. Cut avocados in half and remove the pit. If making your own pico de gallo, mix all ingredients in a bowl and mix. Set aside.
- Starting with one half of an avocado, use a spoon and scoop the avocado so free from all edges. Press down so it is fully smushed (little messy!). Use a fork to fluff and mix, similar to a baked potato.
- Add 1 tbsp pico de gallo, 1 tbsp lime juice, 1/2 tbsp cilantro, 1 tsp garlic powder, dash salt and pepper. Mix until fully blended.
- Repeat with three other avocado halves. Top each with 1 cilantro leaf. Serve immediately with small tortilla chips. Tostitos Crispy Rounds are perfect.
