Have a complete, healthy family meal on the table in just 25 minutes with this grilled chicken and mash recipe.
Ingredients
- 800g desiree potatoes, peeled, chopped
- 1/2 cup milk
- 25g butter
- 2 tablespoons olive oil
- 4 small (150g each) chicken breast fillets
- 1/2 quantity Spiced fig chutney (see related recipe)
- Steamed green beans, to serve
Method
- Step 1Place potato in a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Cook, uncovered, for 10 minutes or until tender. Drain. Return to pan. Using a potato masher, roughly mash potato. Add milk and butter. Mash until smooth. Season with salt and pepper. Cover to keep warm.
- Step 2Heat oil in a large frying pan over medium-high heat. Cook chicken for 5 to 6 minutes each side or until cooked through. Transfer to a plate. Cover with foil. Set aside for 5 minutes to rest.
- Step 3Divide mash between plates. Top with chicken and chutney. Serve with steamed greens.
