Author Notes: This dish was always requested by my father-n-law when they would come to visit. I love the blend of cheddar and Velvetta cheese along with the soft and crunch of the texture. My son now asks for this side salad to be made about once a month. —Simply Gourmet

cups Frozen peas

cup Diced Celery

cup Diced Onion

cup cubed cheddar or jack cheese

cup cubed Velvetta cheese

Hardboiled eggs, diced

Lawrys salt to taste

cup Mayonnaise
Directions
- In a large colander, run your frozen peas under water to thaw. Keep them firm but not frozen. Drain well.
- In a large bowl, combine all of your ingredients and gently mix. Add more mayonnaise if you like your salad creamier.
