Fresh green beans dressed with a zingy vinaigrette dressing is the perfect accompaniment to any main meal.
Ingredients
- 300g thin green beans
- 1 tablespoon extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 small red onion, thinly sliced
- 50g redcurrants (frozen, thawed or fresh) (see Notes)
Method
- Step 1Top but don’t tail the beans. Cook in a saucepan of simmering salted water for 3 minutes, then drain and set aside.
- Step 2Combine both the oils with the vinegar in a bowl and season to taste with salt and pepper.
- Step 3Add the green beans, red onion and redcurrants and toss well to serve.
