These tasty meatballs are sure to become family favourites.
Ingredients
- 600g lamb mince
- 1 cup fresh breadcrumbs
- 1 garlic clove, crushed
- 1 egg, lightly beaten
- 2 tablespoons oregano leaves, chopped
- 100g feta cheese, crumbled
- olive oil cooking spray
- Pita bread, to serve
- Tzatziki dip, to serve
- Salad
- 250g punnet cherry tomatoes, halved
- 1 Lebanese cucumber, cut into thin sticks
- 1/4 cup mint leaves, shredded
- 1 tablespoon olive oil
- 1 small lemon, juiced
Method
- Step 1Preheat oven to 200°C. Line a large baking tray with non-stick baking paper.
- Step 2Combine mince, breadcrumbs, garlic, egg, oregano, feta, and salt and pepper. Mix well. Shape mixture into balls. Place onto prepared tray. Spray with oil. Bake for 15 minutes or until cooked through.
- Step 3Make salad: Combine tomatoes, cucumber and mint. Whisk together oil, lemon juice, and salt and pepper. Pour over salad. Serve meatballs with salad, bread and dip.
