Makes: 1 cup
Ingredients

pickling cucumbers, diced with skin on

fresh tomatoes, seeded, diced

large sweet onion (or 1 medium sweet onion), diced

clove of garlic, minced

cup fresh parsley, chopped fine

tablespoon dried basil (or 1 tablespoon fresh basil)

tablespoon oregano (or 1/2 tablespoon fresh oregano)

tablespoon lemon juice

pinch fresh mint

salt and pepper to taste
Directions
- Mix all ingredients together and refrigerate for 1-2 hours. Serve with pita chips.
