Ingredients
- 125g seedless red grapes, halved
- 2 nectarines, sliced
- 1 banana, peeled, sliced
- 1 tablespoon Cointreau or Malibu
- 1 tablespoon fresh lemon juice
- 1 tablespoon icing sugar
- 3 sheets filo pastry
- Olive oil spray
- 3/4 cup (185ml) low fat custard
- Extra icing sugar, to dust
Method
- Step 1Preheat oven to 200°C. Combine the fruit, liqueur, juice and half the icing sugar.
- Step 2Spray a sheet of filo with oil. Top with another sheet. Repeat with the remaining sheets. Cut into 6 squares.
- Step 3Grease 6 x 1/2 cup muffin pans. Press filo squares into the bases. Sprinkle with remaining icing sugar and spray with oil. Bake for 5-7 minutes until golden.
- Step 4Fill cases with custard and fruit. Serve dusted with icing sugar, if desired.
