Need dinner fast? This tasty gnocchi dish will take you less than 20 minutes to put together!
Ingredients
- 2 x 375g packets gnocchi
- 1 tablespoon olive oil
- 1 garlic clove, crushed
- 100g prosciutto, chopped
- 120g green beans, trimmed, sliced
- 1/2 cup frozen peas
- 2 tablespoons finely grated parmesan cheese
Method
- Step 1Cook gnocchi in a large saucepan of salted, boiling water, following packet directions, until tender. Drain.
- Step 2Meanwhile, heat oil in a large frying pan over medium heat. Add garlic and prosciutto. Cook for 1 to 2 minutes until prosciutto is golden. Add beans and peas. Cook for a further 5 minutes or until vegetables are tender and bright green. Remove from heat.
- Step 3Add gnocchi and 1 tablespoon of parmesan to prosciutto mixture. Season with salt and pepper. Toss gently to combine.
- Step 4Divide gnocchi mixture between bowls. Top with remaining parmesan. Serve.
