Ingredients
- 800g orange sweet potato, peeled, chopped
- 60g butter, chopped
- 4 (150g each) pork loin medallions
- 1/3 cup orange juice
- 1 tablespoon honey
- 1 tablespoon wholegrain mustard
- 200g green beans, trimmed
Method
- Step 1Cook sweet potato in a saucepan of boiling water for 10 to 12 minutes or until tender. Drain. Return to pan. Add one-third of the butter. Mash until smooth. Season with salt and pepper.
- Step 2Meanwhile, melt remaining butter in a large frying pan over medium heat. Cook pork for 3 to 4 minutes each side, or until just cooked. Transfer to a plate. Add orange juice, honey and mustard to pan. Stir to combine. Reduce heat to low. Return pork to pan. Cook for 1 to 2 minutes or until heated through.
- Step 3Place beans in a microwave-safe dish. Cover. Microwave on high (100%) for 2 to 3 minutes or until bright green and tender. Drain. Serve pork with mash and beans.
