Deck the halls for this modern, Christmas day side with no trimming spared!
Ingredients
- 7kg cooked leg ham
- 1 cup honey
- 2/3 cup firmly packed brown sugar
- 250g glace ginger, finely chopped
- 1/3 cup lime juice
Method
- Step 1Place oven shelf in lowest position. Preheat oven to 180°C/160°C fan-forced. Using a sharp knife, cut through ham rind in a zig-zag pattern around shank. Run thumb underneath rind to separate from fat. Peel and remove rind. Score fat in a diamond pattern (see tip). Wrap shank end of ham in foil.
- Step 2Place honey, sugar and ginger in a saucepan over medium-high heat. Bring to the boil. Reduce heat to medium. Simmer for 5 minutes for flavours to develop. Stir in lime juice.
- Step 3Place ham on a wire rack in a large roasting pan. Spoon over ginger and half the honey mixture. Bake ham, spooning over remaining honey mixture, for 1 hour or until golden. Serve warm or cold.

Notes
Be careful not to score the fat too deeply, otherwise fat will melt and spread during cooking.
