Fresh, healthy and inexpensive, this herb and spice chargrilled chicken tastes great with a lick of sweet chilli sauce.
Ingredients
- 1 1/2 tablespoons chopped fresh coriander root
- 3 garlic cloves, finely chopped
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1/4 teaspoon white pepper
- 1/4 teaspoon ground turmeric
- 4 large chicken thigh fillets, excess fat trimmed
- Olive oil spray
- Steamed white rice, to serve
- Baby cos lettuce, quartered, to serve
- Fresh coriander sprigs, to serve
- Sweet chilli sauce, to serve
Method
- Step 1Process the coriander root, garlic, fish sauce, sugar, pepper and turmeric in a food processor until smooth. Transfer to a bowl. Add the chicken and turn to coat.
- Step 2Preheat a barbecue grill or chargrill on medium-high. Spray chicken with oil. Cook for 6 minutes each side or until golden and cooked through. Thickly slice lengthways. Divide the chicken, rice and lettuce among serving plates. Top with coriander sprigs and serve with sweet chilli sauce.

Notes
Cook’s tip: For a more intense flavour, marinate the chicken in the spice paste overnight.
