Go full speed ahead to dessert with these colourful easy-to-assemble fruit skewers.
Ingredients
- 4 stems lemon grass
- 2 kiwifruit, peeled, each cut into 8 pieces
- 4 freestone peaches, quartered, stones removed
- 8 strawberries, washed, hulled, halved
- 2 tablespoons brown sugar
- 2 tablespoons shredded coconut
- Vanilla yoghurt, to serve
Method
- Step 1Cut the lemon-grass stems into 20cm lengths, then cut in half lengthways. Remove the tough outer layers and trim one end of each stem to make a point (this makes skewering the fruit easier).
- Step 2Thread the kiwifruit, peach and strawberry among the skewers.
- Step 3Preheat grill on high. Place the skewers, in a single layer, on a baking tray. Sprinkle with brown sugar and coconut. Cook under grill for 30 seconds or until the sugar caramelises and the coconut is toasted. Serve immediately with vanilla yoghurt.
