Author Notes: More muffins! These are made with fresh bananas and blueberries and topped with streusel. They are organic and delicious and a good argument can be made for them being healthy to eat…in small quantities of course ;-)>

Serves: 14 muffins
Ingredients
The Muffins:

ripe bananas

1/2
cup sugar

teaspoon ground cinnamon

1/4
teaspoon allspice

1/4
teaspoon nutmeg

1/4
teaspoon salt
-
1
egg @ room temperature
-
1/3
cup walnut oil
-
1
teaspoon baking soda
-
1
tablespoon water
-
2
cups flour
-
8
ounces fresh blueberries
The Streusel Topping:

1/4
cup white sugar
-
1/4
cup brown sugar
-
1
tablespoon cinnamon
-
1
tablespoon cocoa
Directions
- Preheat oven to 350 degrees.
- Mash bananas in a blender. (I use the Ninja Blender)
- In a large bowl combine, bananas, sugar, cinnamon, allspice, nutmeg, salt, egg and oil until thoroughly mixed. Set aside.
- In a small bowl combine baking soda and water, mix and add to banana mixture.
- Add the flour and stir until thoroughly mixed. Then fold in the blueberries.
- Line muffin tins with liner paper and fill with batter to about ¼” from the top. (This batter is thick)
- Mix the streusel ingredients and sprinkle on top of muffins.
- Bake for 20 minutes.
