Try a taste of Morocco with these deliciously fragrant chickpeas.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, halved, sliced
  • 2 garlic cloves, crushed
  • 1/4 teaspoon Coles Brand ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground turmeric
  • 2 x 400g cans Coles Brand chickpeas, rinsed, drained
  • 1 cup vegetable stock
  • 1/2 cup sultanas
  • 2 tablespoons chopped flat-leaf parsley

Method

  • Step 1
    Heat the oil in a large deep frying pan over medium heat. Add onion and cook for 5 mins or until golden. Stir in the garlic, cinnamon, cayenne pepper and turmeric for 30 secs.
  • Step 2
    Add the chickpeas, stock and sultanas. Bring to a simmer. Cook, stirring occasionally, for 10 mins. Season to taste. Sprinkle with parsley.
