Try a taste of Morocco with these deliciously fragrant chickpeas.
Ingredients
- 1 tablespoon olive oil
- 1 onion, halved, sliced
- 2 garlic cloves, crushed
- 1/4 teaspoon Coles Brand ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground turmeric
- 2 x 400g cans Coles Brand chickpeas, rinsed, drained
- 1 cup vegetable stock
- 1/2 cup sultanas
- 2 tablespoons chopped flat-leaf parsley
Method
- Step 1Heat the oil in a large deep frying pan over medium heat. Add onion and cook for 5 mins or until golden. Stir in the garlic, cinnamon, cayenne pepper and turmeric for 30 secs.
- Step 2Add the chickpeas, stock and sultanas. Bring to a simmer. Cook, stirring occasionally, for 10 mins. Season to taste. Sprinkle with parsley.
