Ingredients
- 3 chorizo sausages, sliced
- 80g baby rocket leaves
- 1 red capsicum, seeded and chopped
- 400g can four bean mix, rinsed and drained
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
Method
- Step 1Heat a large non-stick frying pan over medium-high heat. Cook chorizo for 3 minutes, turning regularly, until dark golden and slightly crisp. Remove, drain on paper towel and keep warm.
- Step 2Place olive oil, vinegar, salt and pepper in a non-metallic bowl, and whisk to combine.
- Step 3Place chorizo in a serving dish. Add four-bean mix, capsicum and rocket. Drizzle with dressing and serve with crusty bread.
