Party like it’s 200 million BC with these dinosaur footprint fritters.
Ingredients
- 900g sebago potatoes, peeled, chopped
- 1/2 teaspoon baking powder
- 80g butter, chopped
- 1/4 teaspoon sea salt
- 1 cup plain flour
- 1/2 cup grated cheddar
- 2 green onions, thinly sliced
- 1/2 cup frozen corn kernels
Method
- Step 1Place potato in a large saucepan. Cover with cold water. Bring to the boil over high heat. Boil for 12 to 15 minutes or until potato is tender. Drain. Transfer to a bowl. Mash potato until smooth. Stand for 10 minutes to cool.
- Step 2Add baking powder and 40g butter to potato. Stir to combine. Add salt, flour, cheese, onion and corn. Stir until just combined (don’t over-mix). Roll 1/4 cup mixture into a ball. Place ball on a lightly floured surface. Flatten ball until 1cm thick. Cut out and flour the template, then press firmly onto round to make an imprint. Place on a baking tray lined with baking paper. Repeat with remaining mixture, flouring the template between each use.
- Step 3Melt a little of the remaining butter in a frying pan over medium heat. Cook fritters, in batches, imprint side up first, for 2 to 3 minutes each side or until golden, adding remaining butter when needed. Transfer to a baking tray lined with paper towel to drain. Season with salt and pepper. Serve immediately.
