Unlock exotic aromas and fabulous flavours in these filo triangles.
Ingredients
- 2 teaspoons olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 500g lean lamb mince
- 200g kumara (orange sweet potato), peeled, grated
- 8 sheets filo pastry
- olive oil cooking spray
- 2/3 cup plain yoghurt
- 2 tablespoons chopped mint
- 80g salad leaves, to serve
Method
- Step 1Preheat oven to 200°C. Line a baking tray with baking paper.
- Step 2Heat oil in a large non-stick frying pan over medium-low heat. Add onion. Cook for 5 minutes, or until soft. Add garlic, cumin and coriander. Cook, stirring, for 30 seconds.
- Step 3Add mince to frying pan. Increase heat to high. Cook, stirring, for 5 minutes or until browned. Add kumara. Cook for 10 minutes, or until liquid has evaporated and mixture is thick. Set aside to cool. Divide mixture into 8 portions.
- Step 4Place a sheet of filo onto a clean surface (cover remaining filo with a clean tea-towel). Spray with oil. Fold in half lengthways. Place 1 portion of lamb mixture at short end of filo. Fold over to form a triangle. Continue folding to form a triangle. Repeat with remaining filo and lamb mixture.
- Step 5Place triangles onto tray. Spray with oil. Bake for 20 minutes, or until golden.
- Step 6Combine yoghurt and mint.
