This spicy seafood dish is a flash in the pan, but will fast become a family favourite.
Ingredients
- 4 (about 200g each) skinless salmon fillets
- 1/4 cup pistachio dukkah
- Olive oil spray
- Saffron rice, to serve
- Steamed asparagus, to serve
- Lemon wedges, to serve
Method
- Step 1Sprinkle salmon fillets with the pistachio dukkah and press to coat. Heat a large non-stick frying pan over medium-high heat and spray with oil.
- Step 2Cook salmon for 1-2 minutes each side for medium or until cooked to your liking.
- Step 3Serve the salmon with the saffron rice, asparagus and some lemon wedges.
