Finish off a gourmet dinner party with a platter of these delicate stuffed dates and some strong cups of coffee.
Ingredients
- 20 fresh dates
- 100g blanched whole almonds
- 40g (1/4 cup) icing sugar
- 2 teaspoons rose water (see note)
- 2 drops red food colouring
Method
- Step 1Slit each date lengthwise and carefully pit. Process almonds, sugar, rose water and food colouring to a paste in a food processor. Shape level teaspoons of the paste into almond shapes and insert each into dates. Lightly score paste and serve with mint tea.

Notes
Rose water is very fragrant and tastes of roses. It’s made by distilling water with rose petals. It’s best added at the end of cooking to preserve its flavour.
