There’s a reason this recipe is an Aussie classic – serve this damper and you’ll see why!
Ingredients
- 3 cups self-raising flour
- 2 teaspoons caster sugar
- 80g butter, chilled, chopped
- 1 cup milk
- Extra milk, for brushing
- Extra flour, for dusting
- Extra golden syrup, to drizzle (optional)
Golden syrup butter
- 80g butter, softened
- 2 tablespoons golden syrup
Method
- Step 1Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Sift flour and sugar into a bowl. Add butter. Rub butter into flour mixture until mixture resembles fine breadcrumbs.
- Step 2Make a well in centre. Add milk. Using a flat-bladed knife, stir until dough forms. Turn out onto a lightly floured surface. Knead gently until just smooth. Shape into a 15cm round. Place on prepared tray.
- Step 3Using a sharp knife, score a shallow cross in top of damper. Brush with milk. Dust lightly with flour. Bake for 35 minutes or until damper is golden and sounds hollow when tapped on top. Transfer to a wire rack.
- Step 4Make butter: Using an electric mixer, beat butter and golden syrup until smooth. Serve damper warm with golden syrup butter and extra golden syrup (if using).
