This side salad recipe is just the tip of the iceburg using lettuce, cucumber and apple.
Ingredients
- 1/2 cup whole egg mayonnaise
- 1/4 cup light thickened cream
- 1 tablespoon lemon juice
- 1 small iceberg lettuce, roughly torn
- 1 medium green capsicum, sliced
- 1 Lebanese cucumber, sliced
- 1 celery stalk, sliced
- 1 granny smith apple, halved, cored, thinly sliced
- 1/4 cup pecans, chopped
Method
- Step 1Combine mayonnaise, cream and lemon juice in a small bowl. Season with salt and pepper.
- Step 2Place lettuce, capsicum, cucumber, celery, apple and pecans in a large bowl. Toss to combine. Drizzle with dressing. Toss to combine. Serve.
