Crepes taste delicious in both savoury and sweet dishes. In this recipe, a few basic ingredients give this dinner idea a Chinese twist.
Ingredients
- 1 cup plain flour
- 2 cups milk
- 3 eggs
- 1 tablespoon finely chopped fresh chives
- Olive oil spray
- 1/4 cup hoisin sauce
- 2 teaspoons rice vinegar
- 1 barbecued chicken, shredded (see note)
- 3 green onions, cut into 5cm lengths
- 1 Lebanese cucumber, thinly sliced
Method
- Step 1Sift flour into a bowl. Whisk milk and eggs together in a jug. Add milk mixture to flour. Add chives. Whisk until well combined.
- Step 2Spray a medium, non-stick frying pan with oil. Heat over medium heat. Pour 2 1/2 tablespoons batter into pan. Swirl to cover base. Cook for 2 to 3 minutes or until light golden. Turn over and cook for 1 minute. Transfer to a plate. Cover to keep warm. Repeat with remaining batter.
- Step 3Combine hoisin sauce and vinegar in a bowl. Spread 1 teaspoon sauce mixture over 1 crepe. Top with chicken, onion and cucumber. Roll up to enclose filling. Cut in half. Repeat with remaining crepes, sauce mixture, chicken, onion and cucumber. Serve.
