Try this creamy semi-dried tomato sauce on your favourite pasta or with the potato gnocchi.
Ingredients
- 1 tablespoon olive oil
- 1 leek, halved, washed, thinly sliced
- 1 garlic clove, crushed
- 1/2 cup semi-dried tomatoes, chopped
- 1/2 cup dry white wine
- 300ml light cooking cream
- 50g baby spinach
- 1/4 cup finely grated parmesan cheese
Method
- Step 1Heat oil in a frying pan over medium heat. Add leek and garlic. Cook, stirring, for 3 to 4 minutes or until softened. Add tomato. Stir to combine. Add wine. Cook for 3 minutes or until almost evaporated.
- Step 2Add cream. Cook, stirring, for 3 to 4 minutes or until heated through (don’t boil). Add spinach and cheese. Cook, stirring, for 1 to 2 minutes or until spinach has just wilted. Season with salt and pepper. Serve.
