Make something special tonight with creamy mushroom and asparagus in garlic sauce.
Ingredients
- 60g butter
- 2 tablespoons olive oil
- 2 cloves garlic, crushed
- 500g cup mushrooms, quartered
- 300ml thickened cream
- 1 tablespoon fresh chives, snipped
- Asparagus, steamed, to serve
- Bread, thick slices, toasted, to serve
Method
- Step 1Heat butter and oil together in a large frying pan on high. Add garlic and cook, stirring for 1 min.
- Step 2Stir in mushrooms and saute for 4-5 mins, until tender.
- Step 3Pour in the cream. Cook, stirring, until the sauce boils. Reduce heat and simmer for 3-4 mins, until sauce thickens. Season to taste. Stir in the chives and serve on toast with asparagus.
