Make the most of beautiful seasonal fruit with this colourful dessert.
Ingredients
- 2 oranges
- 2 pink grapefruit
- 2 yellow grapefruit
- 250g small strawberries, hulled, halved
- 2 tablespoons caster sugar
- 1 tablespoon orange-flavoured liqueur (optional)
Method
- Step 1Using a sharp knife, cut a slice from the bases of oranges and grapefruit. Place 1 orange, cut-side down, on a chopping board. Peel skin and pith, following the curve of the fruit. Segment over a bowl (see note). Repeat with remaining orange and grapefruit.
- Step 2Add strawberries, sugar and liqueur (if using) to bowl. Stir to combine. Serve.

Notes
To segment citrus fruit, hold fruit over a bowl to catch juice. Slide knife either side of membrane to free each segment. Place segments in bowl. Squeeze membrane to release juice into bowl. Discard membrane.
