Author Notes: These Cinnamon Sugar Pizzelles were actually a failed attempt at making my cinnamon rolls. I doubled the recipe and the dough just didn’t work out… so I had the bright idea of thinning out the dough and making pizzelles. My dad just gave me his pizzelle maker and I’ve been dying to try some for quite some time. I was so excited and pleasantly surprised with how these turned out! The other amazing thing is you can make a lot of pizzelles from one batch of batter and they are super quick and easy to make. They make a great dessert item for those holiday parties. —Gina Fontana
Makes: ~ 3 dozen pizzelles
Ingredients

cups flour (I use Bob’s Redmill 1:1 gluten free baking flour)

tablespoons sugar

tablespoon baking powder

cup full fat coconut milk

flax egg (1 tbsp flaxseed meal + 2.5 tbsp water)

teaspoons pure vanilla extract

cup almond milk

1/2
cup butter (I use Earth Balance)

cup brown sugar

tablespoons cinnamon
Directions
- Heat your pizzelle maker
- Blend all ingredients until you achieve a pancake-like batter, adding more almond milk as needed.

Add a heaping teaspoon of batter for each pizzelle, close, and cook for about 30 seconds
** NOTE: cooking time will vary depending on your pizzelle maker
