Stir-fry is the quickest way to get a meal on the table in minutes. This one is a tasty combination of spicy pork and noodles.
Ingredients
- 350g pkt fresh egg noodles
- 1 tablespoon vegetable oil
- 400g pork loin medallions, thinly sliced across the grain
- 400g pkt Asian stir-fry vegetables
- 190g jar Thai chilli jam
- 1 cup whole fresh basil leaves
Method
- Step 1Prepare noodles according to packet directions and set aside.
- Step 2Heat oil in large wok and stir-fry pork, in two batches, until lightly browned. Return all pork to wok with Asian stir-fry mix and continue to stir-fry for 1 min, or until vegetables are just tender. Add chilli jam and prepared noodles and stir-fry until heated through. Stir through basil and serve immediately.
