Sweet chilli and chicken make easy partners. Chicken drumsticks, easily available from your local butcher or supermarket poultry counter, come up crispy when slightly charred on the barbecue or grill.
Ingredients
- 2 tablespoons chilli jam or sweet chilli sauce
- 1 clove garlic, crushed
- 1 tablespoon peanut oil OR canola oil
- 8 chicken drumsticks
Salad
- 1 lebanese cucumber, seeded and sliced
- 1/4 cup mint leaves
- 2 teaspoons lime juice
Method
- Step 1Place the chilli jam, garlic and oil in a bowl. Make 2-3 slashes in the flesh of each drumstick and add to the marinade, tossing to coat. Cover and refrigerate for 15 minutes.
- Step 2Meanwhile, combine the cucumber, mint and lime juice. Set aside.
- Step 3Heat a grill or barbecue to medium heat. Cook the chicken for 10 minutes, turning regularly until cooked through and slightly charred. Serve with cucumber salad.
