These speedy fritters are perfect for those days when you are short on time.
Ingredients
- 75g packet chicken-flavoured instant noodles (see note)
- 100g green beans, trimmed, thinly sliced
- 3/4 cup self-raising flour
- 1 egg, separated
- 3/4 cup chopped barbecued chicken
- 2 tablespoons peanut oil
- 1/4 cup kecap manis
Method
- Step 1Place noodles and beans in a heatproof bowl. Cover with boiling water. Stand for 5 minutes. Drain. Using scissors, roughly chop noodles.
- Step 2Place flour in a bowl. Make a well. Add egg yolk and 1/2 cup cold water. Whisk until smooth. Add noodle mixture, all 3 seasoning sachets from noodle packet and chicken. Stir to combine. Whisk egg white in a bowl until stiff peaks form. Fold into batter.
- Step 3Heat half the oil in a large frying pan over medium-high heat. Drop 1/3 cup mixture into pan, pressing gently with a spatula to flatten slightly. Repeat 3 more times to form 4 fritters. Cook for 2 minutes each side or until golden and cooked through. Transfer fritters to a plate lined with paper towel. Cover loosely with foil to keep warm. Repeat with remaining batter to make 8 fritters, adding more oil when necessary. Serve fritters drizzled with kecap manis.
