Treat the family to these easy chicken noodle meatballs – the kids, in particular, will love them!
Ingredients
- 220g packet thin hokkien noodles
- 350g chicken breast mince
- 2 green onions, thinly sliced
- 1 medium carrot, grated
- 5 (100g) button mushrooms, finely chopped
- 2 tablespoons sweet chilli sauce
- 2/3 cup dried multigrain breadcrumbs
- 2 tablespoons canola oil
- Sweet chilli sauce, to serve
Method
- Step 1Place noodles in a large, heatproof bowl. Cover with boiling water. Stand for 5 minutes or until just tender. Drain. Refresh under cold water. Using kitchen scissors, cut noodles into 5cm lengths. Return to bowl.
- Step 2Add mince, onion, carrot, mushroom, sauce and breadcrumbs to noodles. Stir to combine. Roll tablespoons of mixture into balls. Place on a plate.
- Step 3Heat oil in a frying pan over medium-high heat. Cook balls in batches, turning, for 6 to 7 minutes or until browned and cooked through. Serve with sweet chilli sauce.
