Just a few simple ingredients are needed to create this tasty family pasta.
Ingredients
- 400g dried farfalle pasta
- 1 barbecued chicken
- 190g jar sun-dried tomato pesto
- 70g packet baby rocket leaves
- 100g parmesan, shaved, to serve
Method
- Step 1Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender.
- Step 2Meanwhile, remove chicken from bones. Discard skin and bones. Shred chicken flesh.
- Step 3Drain pasta, reserving 2 tablespoons of cooking water. Return pasta and reserved water to saucepan. Add pesto. Toss well to combine.
- Step 4Add chicken, rocket, and salt and pepper. Toss over low heat until rocket just starts to wilt. Divide pasta between bowls. Top with parmesan. Serve.
