Keep a batch of these muesli bars in the fridge for a healthy any time snack.
Ingredients
- 250g (2 1/2 cups) rolled oats
- 35g (1/2 cup) shredded coconut
- 40g (1/4 cup) pepitas
- 2 tablespoons chia seeds
- 1 1/2 teaspoons Masterfoods Ground Cinnamon
- 110g (2/3 cup) dried pitted dates, chopped
- 80g (1/2 cup) raw cashews, roughly chopped
- 60ml (1/4 cup) vegetable oil
- 2 tablespoons brown sugar
- 175g (1/2 cup) honey
- 1 teaspoon vanilla extract
- 1 egg, lightly beaten
Method
- Step 1Preheat oven to 140°C or 120°C fan forced. Lightly grease and line a 20 x 30cm (base measurement) rectangular baking tin with baking paper.
- Step 2Place the rolled oats, coconut, pepitas, chia seeds, cinnamon, dates and cashews in a large bowl.
- Step 3Place the oil, sugar honey and vanilla in a medium saucepan, cook stirring over a medium heat until sugar is dissolved and ingredients are well combined. Add the honey mixture to the dry ingredients and stir to combine. Add the beaten egg and mix until all ingredients are well combined. Using slightly wet hands, press mixture firmly into prepared tin. Press mixture with the back of a spoon to get a smooth even surface.
- Step 4Bake in preheated oven for 40-45 minutes, or until an even golden brown. Set aside to cool completely in the tin before removing and cutting into bars.
Notes
Tip: These muesli bars can be kept stored in an airtight container. In hot weather, keep in the fridge to stay crisp.
You can substitute the dates with any combination of dried fruit such as apricots, sultanas or craisins.
