Make a ‘mess’ with this scrumptious canned fruit dessert.
Ingredients
- 300ml thickened cream
- 2 teaspoons icing sugar mixture
- 1 teaspoon vanilla extract
- 100g petite vanilla meringues, crushed
- 1 cup drained pitted morello cherries, halved (see note)
Method
- Step 1Using an electric mixer, beat cream, sugar and vanilla until soft peaks form. Fold in meringue and three-quarters of the cherries.
- Step 2Spoon into serving glasses. Top with remaining cherries. Serve.

Notes
We used morello cherries, as their slightly sour flavour balances the sweetness of the meringues, sugar and cream. You could also use 415g can stoneless black cherries in syrup, drained.
Tip: You could use 6 pavlova nests, crushed, instead of meringues.
