It used to be hard to get the work/loaf balance right. Not anymore with this scrumptious recipe.
Ingredients
- 1 1/2 cups self-raising flour
- 1 cup caster sugar
- 1 cup desiccated coconut
- 270ml coconut milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup (150g) frozen cherries, halved
- 2 tablespoons desiccated coconut, extra
Method
- Step 1Preheat oven to 170°C/150°C fan-forced. Grease a 6cm-deep, 10cm x 20cm (base) loaf pan. Line base and sides with baking paper, allowing a 2cm overhang at long ends.
- Step 2Sift flour into a large bowl. Add sugar and coconut. Stir to combine. Whisk coconut milk, eggs and vanilla in a jug until combined. Fold into flour mixture. Fold in cherries. Spoon into prepared pan. Smooth surface. Sprinkle with extra coconut.
- Step 3Bake for 1 hour to 1 hour 15 minutes or until a skewer inserted in centre comes out clean. Stand in pan for 10 minutes. Turn out onto a wire rack to cool. Serve.
