Create the ultimate cheeseburger at home with this fabulous bacon-wrapped version.
Ingredients
- 500g beef mince
- 1 egg, lightly beaten
- 3/4 cup fresh breadcrumbs
- 2 spring onion bulbs, finely chopped
- 1 tablespoon tomato sauce
- 2 teaspoons mild American mustard
- 4 slices cheddar cheese
- 4 middle bacon rashers
- 1 tablespoon olive oil
- 2 tablespoons barbecue sauce
- Sliced gherkins, to serve
- Baby cos lettuce leaves, to serve
- Sliced tomato, to serve
- Toasted bread rolls, to serve
Method
- Step 1Combine beef mince, egg, breadcrumbs, spring onion, tomato sauce and mild American mustard. Season. Shape mixture into 4 large patties.
- Step 2Preheat oven to 180°C/160°C fan-forced. Place 1 square of sliced cheddar cheese on top of each patty. Wrap 1 bacon rasher around each patty, starting at the ‘eye’ end. Secure with a toothpick.
- Step 3Heat 1 tablespoon olive oil in a non-stick frying pan over medium heat. Cook patty for 2 minutes each side or until browned. Transfer to a greased baking tray. Brush with 1 tablespoon barbecue sauce. Bake for 15 minutes or until cooked through, basting with another tablespoon barbecue sauce halfway through cooking.
- Step 4Arrange patties, sliced gherkins, sliced tomato and baby cos lettuce leaves between toasted bread rolls. Serve.
