In just 20 minutes this salad is on the table, showcasing the best summer has to offer.
Ingredients
- 1/4 (about 1.2kg) seedless watermelon, rind removed, cut into 1cm-thick wedges
- 1.2kg (about 20) large cooked king prawns, peeled leaving tails intact
- 200g feta, crumbled
- 1/2 red onion, cut into thin wedges
- 1/2 cup fresh mint leaves
Ouzo dressing
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon ouzo
Method
- Step 1To make the ouzo dressing, whisk together the vinegar, oil and ouzo in a jug. Season with salt and pepper.
- Step 2Preheat a chargrill or barbecue grill on high. Add the watermelon and cook for 1 minute each side or until charred.
- Step 3Arrange the watermelon on serving plates. Top with prawns, feta, onion and mint. Drizzle over the ouzo dressing. Serve immediately.

Notes
((( With a twist ))) Chicken, chilli & watermelon salad: Replace the prawns with 1 Woolworths Country-Style Roast Chicken, skin and bones removed, meat shredded. Replace the feta with 200g bocconcini, torn. Replace the fresh mint leaves with fresh basil leaves. To make the chilli dressing, replace the ouzo with a pinch of crushed chillies. If desired, use this chilli dressing instead of the ouzo dressing in the Chargrilled Watermelon, Prawn & Feta Salad.
