This healthy lamb steak dinner ticks all the right boxes – lower GI, low kilojoule and diabetes-friendly.
Ingredients
- 500g kumara (orange sweet potato), peeled, cut into 3cm pieces
- 600g eggplant, cut into 4cm pieces
- Zest and juice of 1 lemon
- 2 1/2 tablespoons olive oil
- 3 garlic cloves, crushed
- 2 teaspoons piri piri seasoning
- 300g can chickpeas, rinsed, drained
- 2 tablespoons chopped parsley
- 4 lamb leg steaks
Method
- Step 1Preheat oven to 220°C. Arrange kumara and eggplant on a large, baking tray lined with baking paper.
- Step 2Combine lemon rind and juice, 2 tablespoons olive oil, garlic and piri piri in a small bowl. Drizzle half over vegetables, tossing. Roast for 20 minutes. Add chickpeas. Roast for 5 minutes. Stir parsley into remaining lemon mixture and set aside.
- Step 3Brush lamb with remaining olive oil. Preheat chargrill to medium-high. Add lamb. Cook 3 to 4 minutes each side. Serve with vegetables and drizzle with remaining lemon mixture.
