This healthy lamb steak dinner ticks all the right boxes – lower GI, low kilojoule and diabetes-friendly.
Ingredients

500g kumara (orange sweet potato), peeled, cut into 3cm pieces

600g eggplant, cut into 4cm pieces

Zest and juice of 1 lemon

2 1/2 tablespoons olive oil

3 garlic cloves, crushed
-
2 teaspoons piri piri seasoning
-
300g can chickpeas, rinsed, drained

2 tablespoons chopped parsley

4 lamb leg steaks
Method

Step 1Preheat oven to 220°C. Arrange kumara and eggplant on a large, baking tray lined with baking paper.

Step 2Combine lemon rind and juice, 2 tablespoons olive oil, garlic and piri piri in a small bowl. Drizzle half over vegetables, tossing. Roast for 20 minutes. Add chickpeas. Roast for 5 minutes. Stir parsley into remaining lemon mixture and set aside.

Step 3Brush lamb with remaining olive oil. Preheat chargrill to medium-high. Add lamb. Cook 3 to 4 minutes each side. Serve with vegetables and drizzle with remaining lemon mixture.
