Pork is perfectly paired with apple salsa in this char-siu stir-fry with a modern twist.
Ingredients
- 600g pork leg steaks, trimmed, thinly sliced
- 1/3 cup char siu sauce
- 2 tablespoons peanut oil
- 1 cup shredded Chinese cabbage (wombok)
- Steamed jasmine rice, to serve
Apple salsa
- 1 medium granny smith apple, cored, cut into matchsticks
- 1/4 cup fresh coriander leaves
- 1 tablespoon lemon juice
Method
- Step 1Make apple salsa: Place apple, coriander and lemon juice in a bowl. Toss to combine.
- Step 2Place pork and char siu sauce in a bowl. Toss to coat (see note). Heat wok over high heat. Add half the oil. Swirl to coat. Add half the pork. Stir-fry for 2 to 3 minutes or until almost cooked. Transfer to a plate. Repeat with remaining oil and pork.
- Step 3Return pork to wok. Add cabbage. Stir-fry for 1 to 2 minutes or until heated through. Serve with rice and apple salsa.
